The first time I fell in love with sushi was at Fish Market in Allston, MA, right off of Boston University’s campus. With only about six tables in the actual restaurant, Fish Market and its small, comforting atmosphere helped nurse me to happiness after many a stressful finals week or midterm season. Once I discovered this spot, I explored the many other incredible sushi restaurants around Boston, including Yamato Boston, which serves all you can eat (!!) rolls!
One of my most treasured memories from the last four years has been exploring the Boston food scene, developing new tastes. Since I’m currently quarantining at home in South Florida, I’m missing my cozy sushi take-out nights and friend dinners at Fish Market, so I decided to make my own rolls in hopes of feeling a bit closer to Boston. Check out the recipe and directions below.



Ingredients – Sushi Rice:
- Sushi rice
- Rice vinegar or apple cider vinegar as a substitute
- Sushi rice (e.g. calrose rice)
- Water
- White sugar
- Salt
- Vegetable oil
Directions – Sushi Rice:
- I used this sushi rice recipe from allrecipes to make my sushi rice. I didn’t have rice vinegar, but apple cider vinegar is a substitute. I also didn’t want to overpower the delicate rice taste with the vinegar, so I only poured about a quarter of what that recipe yields.
Ingredients – Sushi Rolls
- 3 medium carrots
- 1 cucumber
- 1 avocado
- 6 sheets roasted nori (or fewer depending on how many rolls you make)
- 5 cups sushi rice
Directions – Sushi Rolls
- Chop and peel the carrots and cucumber into very thin sticks
- Slice avocado into small strips
- Place 1 sheet of nori over a bamboo sushi mat
- Place sushi rice on top of the nori until it is almost covered. Spread evenly. Leave a lip (1-2 inches) at the end so that the sushi seals once rolled
- Over the top quarter of the nori, add 2-3 thin carrot and cucumber sticks and 1-2 avocado slices. Don’t overfill it!
- Squeeze the bamboo mat while you roll so the sushi is tightly rolled
- Once done rolling, cut the sushi into 6-8 pieces on a cutting board
- Repeat 2-3 times or more if you want additional rolls
